So this all started because my parents were visiting from Ontario and I promised them a proper “BC-style” dinner. My dad’s a retired chef and my mom is super picky, so I was already stressing.

LATTE - noun, pronounced latt-te
Large stone pillars (håligi) capped by stone capitals (tåsa) carved by the ancient Chamorro people to use as building supports. The latte stones have been made of limestone, basalt, or sandstone, and quarries have been found on all of the larger islands of the Marianas.

Really insightful article! I learned a lot from your perspective, and I appreciate how clearly everything is explained.

I always wonder how much of a great meal is actually about the food and how much is just the mood you’re in when you eat it. Like, even the best dish can feel flat if you’re tired or distracted, and something super simple can taste amazing if you’re relaxed and in good company.
I’ve had nearly the same struggle every time someone visits from out of town. They always ask for something “authentic but nice” which somehow means: cozy, not pretentious, but also impressive enough to make it feel like an occasion. Tried a few misses (one place in Abbotsford looked amazing in photos but had reheated sides — not cool), but there are some real gems too if you know where to dig. Last time I was in Mission, I stumbled into this place that served duck confit that legit tasted like something I had in Quebec years ago — rich, crispy, with a fig glaze that wasn’t too sweet. Since then, I’ve started keeping track of my finds and check against Fine Dining Restaurants in Fraser Valley when I need new ideas. It’s not perfect, but it gives a good snapshot of what’s around without the Yelp rabbit hole. What I like is that you can find spots that aren't blasting ads everywhere but are still doing cool seasonal menus or sourcing from nearby farms. I’d say go early or call ahead though — some of these places fill up fast on weekends, especially if there's a winery nearby doing a tasting or event. Also helps to ask the staff what they’re excited about on the menu, because that’s usually what’s best that night.
